He'd fake complete oblivion, though as the date grew closer, it would become more obvious that he knew what was going on. Nevertheless, he'd act completely surprised when you and all the members jumped out to surprise him, flattered that you had worked so hard on a party just for him.

Honestly, Chen probably wouldn't even notice that it was supposed to be a surprise party until he overheard you "sneakily" talking on the phone about it with Suho. The whole time he had thought it was just a regular party. Realizing that you were trying to be secretive, he wouldn't mention it, and would even make an effort to seem as unknowing as possible-sometimes going overboard with the act, leading you to be a bit suspicious about his legitimacy.
