VICTORIA SCONES


Self Raising Flour | 250g

Margarine | 50g

Sugar | 50g

Egg | 1

Milk | 100ml

Cherries | 6

< METHOD >


Light oven gas mark 6 or 200c. In a mixing bowl, place the flour, add the margarine, then rub together to make fine breadcrumbs and stir in the sugar. Mix the egg and milk together in a jug, slowly add enough to the flour to make a firm dough. Save the rest to glaze the scones later. Gently knead the mixture until it is smooth. Divide the mixture into 3 pieces. Shape each piece in to a round about 2cm thick and place on a baking tray. Score each round in to quarters, brush with the egg and milk. Place a cherry on each quarter. Bake for 15-20 minutes until golden brown.
