LEMON, LIME & COCONUT CAKES

Cake;

- Self Raising Flour | 100g

- Margarine | 100g

- Caster Sugar | 100g

- Desiccated Coconut | 25g

- Egg | 2

- Milk | 1 Tablespoon


Topping;

- Caster Sugar | 2 Tablespoons

- Coconut Sprinkles | 15g

< METHOD >

Light oven gas mark 4 or 180c. In a mixing bowl, add the self raising flour, margarine, caster sugar, coconut, eggs & milk and mix them together, then spoon the mixture into the cake cases and bake for 20 minutes until golden brown and firm to the touch. Once complete, allow to cool for 5 minutes.

In a clean bowl, mix together the sugar, lemon or lime juice, then spoon the mixture over the cakes and sprinkle with coconut.
