CHOCOLATE CHIP SHORTBREAD COOKIES

Plain Flour | 360g
Butter | 250g
Caster Sugar | 110g
Chocolate Chips | 100g
Baking Powder | 1 Teaspoon
Vanilla Extract | 1 Teaspoon

Light oven gas mark 5 or 190c. In a mixing bowl, combine the butter, flour, casting sugar, chocolate chips, vanilla extract and baking powder until it forms a dough. On a flour covered surface, roll out the dough and use a cookie cutter to cut out 24 circular shapes and sprinkle with extra caster sugar. Allow to cook for 15-20 minutes, or until pale golden brown.
