1 Tablespoon Warm Water.

~Decorations:

12 Jumbo Marshmallows, cut in half.

Mini Reese's Peanut Butters, cut in half.

Mini Chocolate Chips.

Orange Food Coloring.**

~Directions:

Step 1: Preheat oven to 350 degrees fahrenheit. Line a baking tray with parchment paper or a silicone mat and set aside.

Step 2: Cream together the butter and sugar in a large bowl.

Step 3: Add in the egg, molasses and vanilla and mix until smooth.

Step 4: In a separate bowl, whisk together the flour, the ground ginger, ground cinnamon, baking soda and salt. Slowly add to the sugar mixture, and stir until combined.

Step 5: Using a medium scoop or spoon, place the dough onto the prepared baking tray.

Step 6: Bake for 7 to 8 minutes, or until the center is no longer doughy.

Step 7: Place the marshmallow on the top of the cookies and place back in the oven for 2 minutes.

Step 8: Remove from oven and allow to cool on a cooling rack.

Step 9: Press the marshmallows down with a spatula, to flatten slightly.

Step 10: Once the cookies have cooled, mix together the powdered sugar and water in a medium size bowl. You want the icing to be pretty thick, yet still smooth.

Step 11: Add more water or powdered sugar if needed.

Step 12: Then spoon the icing on top of the marshmallow.

Step 13: Immediately put the Reese's on top of the cookie and then chocolate chips for the eyes.

Step 14: Mix the orange food coloring into the icing and then place in a zip top bag.

Step 15: Snip the very tip of the bag and draw on a nose.

Step 16: Store in an air tight container. Stays fresh for 3 days.

Step 17: Eat and Enjoy!

~Recipe Notes:

*Molasses can be found either in the baking aisle by the sugar and  the other sweeteners, or in the cereal aisle by the maple syrup.

**You can use as little or as much orange food coloring you want. It depends on your taste and what kind of food coloring you are using (gel, powder, liquid etc...). If you don't have orange food coloring on hand, you can combine red and yellow food coloring to make orange food coloring.

***The sprinkles are optional.

Enjoy!
