Peanut Butter Pudding Cookie Monsters

Peanut Butter Pudding Cookie - this easy peanut butter cookie recipe has pudding mix in the dough to keep them soft. We love this easy recipe, especially with chocolate chips inside! And you can turn them into monsters for Halloween!

~Ingredients:

1/2 Cup Unsalted Butter, softened.

1/2 Cup Creamy Peanut Butter.

3/4 Cup Brown Sugar, packed.

1 Teaspoon Vanilla Extract.

1 Large Egg.

1 Tablespoon Milk.

1 box (3.4 ounces) instant vanilla pudding mix.*

1/2 Teaspoon Baking Soda.

2 Cups All Purpose Flour.

2 Cups Chocolate Chips.

1/2 Cup Sprinkles.**

Candy Eyes. ***

~Directions:

Step 1Preheat oven to 350 degrees fahrenheit. Line a tray with parchment paper. 

Step 2: Cream together the peanut butter and the brown sugar until smooth.

Step 3: Mix in the vanilla extract, egg, and milk. Add the pudding mix (the dry mix) to the batter and mix until combined, then mix in the baking soda.

Step 4Slowly mix in the flour until the dough forms. 

Step 5Mix in chocolate chips and sprinkles.

Step 6Scoop 2 tablespoon sized cookie balls onto prepared tray. 

Step 7Using a fork, make criss - cross pattern with the tines of a fork.

Step 8You can top with more chocolate chips or sprinkles, if desired to make the cookies look more festive.

Step 9Bake for 8-12 minutes or until the cookies are no longer glossy on top. 

Step 10While the cookies are warm, press candy eyes in the top. 

Step 11Let cool completely before removing from tray. 

Step 12Store in an airtight container for up to 4 days or freeze for up to one month.

*We used Vanilla Instant Pudding but you can use any flavor you want.

**Sprinkles are optional.

***You can get the candy eyes from Wilton.com or any arts & crafts store. Or you can use black & white frosting.

1) Using pudding in the cookies keeps the cookies soft for days on end.
