Pistachio, Cranberry and White Chocolate Shortbread Cookies

Want to impress your friends and family with the easiest and least time consuming cookie recipe ever? Then whip up these shortbread cookies and make them festive for the holidays.

~Ingredients:

3 Sticks Unsalted Butter, room temperature.

1 Cup Granulated Sugar.

1 Teaspoon Vanilla Extract.

3 1/2 Cups All Purpose Flour.

1/4 Teaspoon Salt.

1 Cup Dried Cranberries, chopped (Craisins).

1 Cup Pistachios, chopped

1 Cup White Chocolate Chips.

~Directions:

Step 1: Cream together the butters and the sugar. 

Step 2: Add in the Vanilla Extract.

Step 3In a separate bowl, whisk together the flour and salt. 

Step 4Add the flour mixture to the butter mixture.

Step 5Mix on low speed until it starts to come together. 

Step 6Add in the remaining ingredients and mix until combined.

Step 7Dump the dough onto a wax paper and form into a log. 

Step 8Roll the wax paper around the log. You can roll it thick or thin depending on how big you want your cookies. 

Step 9Chill for at least 1 hour.

Step 10Preheat oven to 350 degrees fahrenheit. Line a cookie tray with parchment paper or lightly grease.

Step 11Slice the dough and place them on the cookie tray. 

Step 12Bake for 8 - 13 minutes or until the edges barely start to brown.*

*We thought the first batch seemed overcooked, so we pulled the second batch out just before they browned and they were perfect.
