Gooey Chocolate Chip Marshmallow Cookies

Homemade chocolate chip cookies with a twist; Mini marshmallows stuffed inside each cookie. To an unsuspecting guest, they look like your average chocolate chip cookies... So imagine their surprise when they take a bite and discover a surprise marshmallow creme filling hidden inside!

~Ingredients:

1 Cup All Purpose Flour.

1/2 Teaspoon Baking Soda.

1/4 Teaspoon Salt.

1/2 Cup Granulated Sugar.

1/3 Cup Chocolate Chips.

2 Tablespoons Whole Milk.

2 Tablespoon Oil.

1/4 Teaspoon Pure Vanilla Extract.

Mini Marshmallows.*

~Directions:

Step 1Combine all dry ingredients (except marshmallows) in a medium mixing bowl.

Step 2: Next stir in the wet ingredients to form a dough – it will be dry at first, so keep stirring until a cookie dough texture is achieved.**

Step 3Roll into balls, then place two mini marshmallows into each cookie and re-roll into a ball.***

Step 4For soft cookies, refrigerate or freeze until cookie dough balls are chilled. 

Step 5Preheat oven to 325 degrees fahrenheit. 

Step 6Place the cookie balls on a greased baking tray and bake for 11 minutes on the center of the rack. They'll look underdone when you take them out.

Step 7Let them cool 10 minutes, during which time they will firm up.

Step 8: Store leftovers in a covered container.

*We used vegan mini marshmallows here, which retained their shape beautifully while baking and yielded a visible marshmallow creme center.

**If needed, add 1 extra tablespoon of whole milk - we didn't need it but you might.

***If the dough is too soft to roll, you can refrigerate before rolling. 

1) Refrigerate the cookie dough balls if you want soft chocolate chip cookies, or bake right away if you don't.
