SUF!Steven might go vegetarian because he might want to have a healthier lifestyle
But some say because his healing spit caused the meat/animal he eats comes back to life
So he then moved to being a vegetarian...

Here's my headcanon about his healing spit
The healing spit only affects the life form of it recently died, like VERY recent
So, the meat/animal he eats cant suddenly come back to life especially if its ripped to shreds-
