[Simple Snacks] Guacamole Onion Rings

There's a lot of things I love and love multiplies when my favorite things collide. Today, I'll share my love of onion rings and avocado and the flavorful stuff we get when they are brought together.

What do we need:
* 3 avocados, ripe (use Hass, the creamy consistency is perfect for a guac!)
*         1 lime
*         1 tomato, diced and drained of excess water
*         ¼ cup fresh cilantro, chopped
*         2 cloves garlic, minced
*         1 teaspoon salt
*         ½ teaspoon chili powder (you can add a sprinkle of cayenne if feeling adventurous)
*         2 yellow onions, small-medium
*         flour, for breading
*         2 eggs, beaten
*         2 cups panko breadcrumbs
*         oil, for frying

How do we do it?

* In a medium mixing bowl, mash avocados with the juice of one lime. Mix in chopped tomato, cilantro, garlic, salt, and chili powder. (That's your basic, delicious guacamole!!! Go for fresh ingredients as much as you can. Yum!)

* Cut the onions into ½-inch (1 cm) slices. Carefully separate the layers into individual rings. Lay out your onion rings on a tray covered by waxed paper and fill each with guacamole. Place tray in freezer until solid (minimum for 1 hour).

*Place the flour, beaten eggs, and bread crumbs to three separate bowls.

*Remove frozen guacamole rings from freezer.

*Roll them in flour, then egg, and finally bread crumbs. Coat once more in egg and bread crumbs.

* Use a large pan and heat oil to 350˚F (180˚C). Fry guacamole onion rings in batches until nicely brown and crispy on both sides. You can also use a deep frier, if you have one handy.

* Drain off any excess oil. Sprinkle with salt and lime juice. Serve with sour cream.
