Feeling peckish? Then this simple snack recipe is perfect, it's super-easy to make and healthy too.
Ingredients
• 400g can of chickpeas, drained.
• 1 clove of garlic.
• 1 large roasted red pepper (to save time you can use pre-prepared from a jar).
• 1 tbsp tahini paste.
• Juice from half a lemon.
• 4 walnut halves, chopped up.
• 2 carrots, 2 courgettes or cucumbers and 2 celery sticks cut into batons for dipping.
Method
• Blend the chickpeas, pepper, tahini and lemon juice together until you are left with a thick purée, and then stir in the walnuts.
• Serve with vegetable sticks.
The hummus will keep for a couple of days if stored in the fridge in a sealed container. Veggie sticks are best prepared and served fresh.
