[Sweet Tooth] Stuffed Figs by Lynn

This is usually a Fall recipe, but I'm nostalgic for things I can't eat right now. (It's pouring here in Florida and I rather be nostalgic than trapped and "hangry".)

Ramblings aside, think figs. Delicious, sweet, with rich texture. How can we improve on them? We stuff our figs, of course!

You will need
12 fresh figs
4 oz soft goat cheese (I get mine infused with honey, but then, I'm a maniac)
1 tsp extra virgin olive oil
Salt and freshly ground black pepper
1/4 cup of honey
(And if you love bacon, this is your chance. I add crispy bacon bits on top, but it's not necessary.)

These are your steps:
Preheat oven to broil. Cut off stems of figs and cut an "X" in the top of each fig 1/3 way through.  (Or cut them in half, it also works!)

Place the figs on a greased sheet tray. If they are a little wobbly, you can cut a bit off the bottoms of the figs so they stand upright.

You can use either a piping bag or a teaspoon to stuff your figs, just make sure the cheese is softened and you divide it evenly between your dozen figs.

Brush the figs with olive oil. And use a little bit of salt and a whole lot of pepper to season.

Broil them for about five minutes or until you can see the goat cheese is starting to brown.

Remove your figs and drizzle them with honey.

Serve at room temperature.

Kick back and relax with a Pinot Grigio (or white grape juice, if you are under 21) and Enjoy!
