1. Wash the peppers and drain excess water. I'm using green chili picante for this recipe.

2. Cut a small slit by the stem then across the length of the pepper. Then, remove the seeds with a teaspoon for easier scraping.

WARNING: Wear gloves during this step. We don't want your hands to be on fire the whole day. Trust me! It wasn't great.

You can skip this step and leave the seeds in if you want it to be really spicy.

3. After prepping your peppers, slice the cheese into thick strips. This will depend on how thick your peppers will be. You may mix other cheeses or your filling of choice in this step. Then, separate the wrappers after taking it out from the packaging. If you will not use immediately, I suggest you wrap or cover it as to avoid drying it out.

4. Please refer to the above image on how to stuff your peppers properly and roll your wrappers to make it look like a dynamite. To seal the dynamite lumpia, you may use egg white or just plain water.

You may also opt out the stems

5. Last step, you have the option to deep fry or bake them. I wanted to use less oil, so I baked them at 200C for 12-15 minutes. The cheese may have oozed out a bit during baking, but that's okay! They still taste great!

6. For the dipping sauce, just mix the vinegar, garlic, pepper and salt together.

Here's a tip on making it last longer: After prepping a batch, you may immediately transfer it to an air-tight container and freeze them. When you need a snack, just pop the frozen dynamite lumpia into an air fryer or thaw them a bit before frying.

Happy eating!
