[Dangerously Delicious] Strawberries: both Saintly and Sinful

You know we will be dragging this Valentine's thing 'til the end. Yes, February is all about indulgence and I have strawberries by the basket load!

Let's give them something to talk about!

I have two for one this time, and pretty easy both. With all the loving going on, we have no time for the kitchen.

I'll toss a coin and...

Sinful it is! Let's start with:

Strawberry Crumble

It is what it is! No more no less. Easy to make, delicious to eat. Will take less than an hour of your time!

This is what you will need:

Ingredients
* 6 cups strawberries, (do away with their little green mop and chop them in quarters)
* 1 tablespoon fresh lemon juice (Yes, I said fresh, squeeze away. I'll be watching!)
* 2 tablespoons all-purpose flour
* 3 tablespoons of brown sugar , divided
* 1/3 cup of almond flour (fancy!!!)
* 1/3- cup rolled oats (now that I think about it, this is not THAT sinful. Repeat after me: "Look, Mamma, I'm doing the fiber thing!)
* 1/2 teaspoon baking powder
* 1/2 teaspoon cinnamon
* 1/8 teaspoon salt
* 3 tablespoons cold unsalted butter

Instructions
1. Preheat oven to 375F.
2. Lightly grease an 8-inch brownie dish with cooking spray.
3. Layer the strawberries on the bottom of the dish and toss with lemon juice. (Allow them to socialize a bit)
4. In a small mixing bowl, combine flour and 1 tablespoon light brown sugar until it all incorporate.
5. Add the brown sugar mixture to the strawberries and mix to combine. Set aside. (Whisper: "This is how we all should get along!")
6. In a mixing bowl, whisk together almond flour, oats, baking powder, cinnamon, salt and remaining brown sugar.
7. With your fingers, rub in butter until mixture is crumbly. (If you are not having fun at this stage, so not continue!)
8. Press mixture in between your fingers into small lumps and sprinkle over strawberries.
9. Bake for 30 to 35 minutes, or until top is golden brown and fruit is bubbling.
10. Remove from oven and let stand a few minutes.
11. Serve warm or cold.
12. If you want to be extra naughty, add some whipped cream, or better yet, a scoop if your fave ice cream!!!

Do you like your strawberries working for the light side? If you believe the groundhog, then Spring is right around the corner and there's nothing better than a light salad to forget all the winter stuffing we've been doing.

Spring Salad with Lemon Vinaigrette

Let's go!

What do we need:

HERE ARE THE INGREDIENTS YOU'LL NEED FOR STRAWBERRY SPRING SALAD:
* spring mix
* strawberries (quartered)
* red grapes (cut in half)
* walnuts
* dried cranberries
* feta cheese (crummmmbly!)
* extra virgin olive oil
* lemon juice
* honey
* Dijon mustard
*  salt

Let's get that dressing out if the way:
Whisk it!
* 3 Tbsp Lemon Juice
* 2 tsp Honey
* 1 tsp Dijon Mustard
* Pinch of Salt
Then incorporate 1/4 cup Olive Oil while thinking about how the best stuff in life takes time.

Then, this is where patience comes in:
Mix all you have left in a large salad bowl. Make sure those strawberries are front and center because nor walnuts, cranberries grapes or feta cheese should rain on their parade! Then pour that delicious vinaigrette as you are ready to serve!
