[V-Day Recipe] Passionfruit Ceviche by Sam

February is upon us, and love is in the air! They say there are plenty of fishes in the sea, and while they mean it in a romantic way, we will take it literally today with a Valentine's dish that is sure to impress your significant other. And if you don't have a significant other, then you can do it for yourself and have two helpings. Win/win.

I'm of course talking about ceviche! And not any ceviche, but a passionfruit ceviche, the most passionate of ceviches. It says so in the name. This simple dish won't take you more than a few minutes to make, but I assure you, once you do it, it will stay forever in your recipe book. Let's get right to it!

INGREDIENTS:

- 1 Cup Mashed potatoes, made with no milk or butter. We want it dry.

- 2 White fish fillets, no skin, diced into bite-sized pieces.

- 1/2 Red onion, thinly sliced. White works well if you don't have red.

- 1/2 Green/Yellow/Red bell pepper, thinly sliced.

- 1/2 Cup Lime juice.

- 1/3 Cup Passionfruit juice/pulp.

- 2 Tbsp Aji Amarillo paste. If not available, substitute with hot sauce, or 1/2 teaspoon of paprika.

- 2 Fresh Chillies, thinly sliced. Serrano works best, but any other would work as well.

- 2 Tbsp Finely chopped cilantro. If you're one of the mutant folk that has the gene that makes cilantro taste like soap, use parsley, I guess.

- Salt and pepper to taste.

(Optional): 1 Can of sweet corn.


INSTRUCTIONS:

Add everything into a bowl and mix together. That's it. Pretty easy if you ask me. Let it sit in the bowl for 5 minutes, up to 2 hours. That's all it takes from the acid of the lemon and the passionfruit to cook the fish and for the flavors to get to know each other in that delicious bathtub. Honestly, the hardest part of it is making the mashed potato, and that's just boiling potatoes and mashing them.

To serve, get yourself a ring mold. If you don't have one, you can make one by opening both sides of a tin can. That's it. Easy enough. Put the ring mold on a plate, put a dollop of mashed potatoes in the bottom as a base, then add spoonfuls of the mix on top of it. Make sure to pat it down to make sure it stays together when unfolding.

Carefully lift the mold, and voila. You have a beautiful passionfruit ceviche.

Or, if you don't want the hassle, just serve it in a cup or a small bowl. It will taste the same.
