Vanilla Chai Tea

Ingredients:

-8 whole peppercorns

-2 mL (1/2 tsp) whole allspice

-2 cardamom pods

-1 cinnamon stick

-4 whole cloves

-8 tea bags

-15 mL (1 tbsp) honey

-4 cups boiling water

-500 mL (2 cups) 2% milk

-15 mL (1 tbsp) vanilla extract

-125 mL (1/2 cup) heavy whipping cream

-7 mL (1 1/2 tsp) confectioners' sugar

-Ground allspice

Instructions:

1. Place the first 5 ingredients in a large bowl. With end of a wooden spoon handle, crush mixture until aromas are released. Add tea bags, honey and boiling water and steep, covered, for 6 minutes.

2. In a small saucepan, heat milk. Strain tea into a heatproof pitcher then stir in milk and vanilla.

3. In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and beat until soft peaks form. Top servings with whipped cream and sprinkle with allspice.
