Ah this is one that no one really thinks of.
Ok everyone knows about Salem's narration at the beginning of RWBY about Grimm almost wiping Humans out. So here is how you prove this one.
Humans before the time of them "discovering" Dust were getting destroyed by the Grimm. So how to prove that Grimm were humans well it takes a little bit of speculation to say for sure but here goes.
A tribe of humans before Grimm ever existed stumbled upon a dark piece of Dust. Let's call it "Death Dust" it corrupted these humans and killed them in the process using their souls to manifest with a little piece of this death dust within them. So when they attacked other humans it killed them and other humans of course ran from scary monsters so they couldn't figure this out.
That is why it was not passed on in legend.
