Obviously, the Marauders got a kick out of pranking Snape and his fellow Slytherins, but they were the less harmless pranks, they were the pranks when genuine injury may occur.
For the more innocent pranks however...They often took to pranking people who were mostly innocent but could do with light punishment, for good measure. Peter had a range of ex-girlfriends who were often in the firing line and then you had the less agreeable people who were trying out for the Gryffindor Qidditch team, AKA those who may actually be better than James and Sirius. They even pranked Professor Flitwick a few times, that was always fun. Then you had the whole school pranks that absolutely no one could avoid.
They once tried pranking McGonagall. They have never regretted anything so much in all their lives.
