Cream Buns

Prep and Cook Time: 1 ½ hours

Makes: 12

Ingredients:

7g (2 teaspoons) dried yeast
600g (4 cups) plain flour
55g (¼ cup) caster sugar
125ml (½ cup) warm milk
½ teaspoon mixed spice
90g butter, chopped
1/3 cup sultanas
1 cup warm water
1 tablespoon milk, extra
1½ tablespoons raspberry jam

Glaze:
1 tablespoon caster sugar
1 teaspoon gelatine
1 tablespoon water

Washed Mock Cream:
250g butter
2 teaspoons vanilla essence
220g (1 cup) caster sugar

Step 1: Combine yeast, 1 teaspoon of the flour, 1 teaspoon of the sugar and warm milk in small bowl, cover, stand in warm place about 1 0 minutes or until mixture is frothy.

Step 2: Sift remaining flour and spice into large bowl, stir in remaining sugar. Rub in butter, stir in sultanas. Stir in yeast mixture and water, mix to a soft dough.

Step 3: Turn dough onto floured surface, knead about 5 minutes or until dough is smooth and elastic. Return dough to large greased bowl, cover, stand in warm place about 40 minutes or until dough is doubled in size.

Step 4: Turn dough onto floured surface, knead until smooth. Divide dough into 12 portions. Knead each portion into a ball, place on greased oven trays, stand, uncovered, in warm place about 15 minutes or until dough is well risen. Brush dough evenly with extra milk, bake at 220°C for about 10 minutes, reduce heat to 180°C, bake further 10 minutes or until cooked.

Step 5: Brush buns with glaze while hot, cool on wire racks. Split cold buns, fill with some of the jam, top with mock cream then some more jam. Dust tops with sifted icing sugar, if desired.

Glaze:

Step 6: Sprinkle sugar and gelatine over water in cup, stand in small pan of simmering water, stir until dissolved.

Washed Mock Cream:

Step 7: Cream butter, essence and sugar in small bowl with electric mixer until light and fluffy. Remove bowl from mixer, cover butter mixture with cold water, swirl around bowl for 1 minute, pour off water. Repeat washing and beating until mixture is white in colour and sugar dissolved. You will need to do this about 6 times.
