Ingredients:
¼ onion diced
¼ apple diced
¼ red capsicum diced
¼ stick celery sliced thinly
½ teaspoon oil
½ teaspoon cumin
½ teaspoon coriander
¼ cup peanuts
¼ cup sultanas
1 tablespoon dried apricots diced
¼ cup instant couscous
1 teaspoon vegetable stock powder
½ cup boiling water
½ spring onion finely sliced

Step 1: Dice the onion, apple, capsicum finely and slice the celery.
Step 2: Dice the dried apricot.
Step 3: Microwave the onion, apple, capsicum, celery and the spices in the oil for 1-2 minutes.
Step 4: Add the peanuts, sultanas, dried apricots and couscous.
Step 5: Add the stock, stir, cover with cling wrap and microwave for 5 minutes.
Step 6: Stir through the spring onion and serve immediately.
