Carrot and Zucchini Muffins

Ingredients:

2 cups of self-raising flour

½ brown sugar

½ teaspoon bicarbonate of soda

1 teaspoon cinnamon

1 cup grated carrot, lightly packed

1 cup grated zucchini, lightly packed

½ cup chopped walnuts

2 eggs

¾ cup milk

90g butter, melted

Step 1: Preheat oven (Bake 180°)

Step 2: Wash and grate carrot and zucchini.

Step 3: Chop nuts.

Step 4: Beat eggs.

Step 5: Melt butter (Set aside to cool).

Step 6: Sift flour, cinnamon and soda into a bowl.

Step 7: Add sugar, vegetables, butter, eggs, milk and nuts and mix well.

Step 8: Divide mixture into greased muffin tins.

Step 9: Bake for 20 minutes in a moderate oven.
