Ingredients

1 1/4 cup all-purpose flour + 2 tablespoons

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

3/4 cup granulated sugar

1 egg at room temperature

2 tbsp oil

1/4 cup sour cream, at room temperature

1 tsp vanilla extract

2 medium bananas, mashed

1 1/2 cup fresh strawberries, quartered


Instructions

Preheat the oven to 350F. Grease a 9X5 loaf pan and keep it aside.

In a bowl with strawberries add 2 tablespoons of flour and coat them well and keep them aside.

In a mixing bowl combine flour, baking powder, baking soda, and salt.

In another bowl beat egg, sugar, vanilla extract, sour cream, and oil. Add the mashed bananas.

Combine the dry and wet mixture until well combined. Fold in the strawberries to the batter.

Pour the batter into the prepared loaf pan, add some strawberries on top and bake the bread for 60-65 minutes until the toothpick inserted comes out clean.

Allow the bread to cool down for 10 minutes and then invert the loaf pan on a wire rack. Once the bread has cooled completely slice the bread and serve.
