This is a list I comprised after watching every single official SwSh video on YouTube, both in English and Japanese, as well as searching through the Pokémon website.
Basically I'm going to show every Pokémon I found, and I'm also going to have a number count for their evolutions as well. I'm going to have the same Pokémon Evolution listed, but it's not going to count in the final score. You'll see what I mean.

And if you add in the Galarian Forms (and Koffing), then you'd have 172 Pokémon returning to Galar.
I'm going to be adding to this list as more Pokémon are revealed.
Also, the names for the protagonists have been revealed! Their names are Gloria (from "Glory") and Victor (from "Victory")
Just thought I should mention it.
