POTATO SOUP

Ingredients:
Extra virgin olive oil
1 cup chopped mushrooms
1 cup chopped celery

5 large potatoes, peeled and diced
1/2 t salt

4 C vegetable broth

4 C unsweetened soy milk
1/4 t celery salt
Salt
Pepper





Make it:
Sauté mushrooms and celery in oil.

Add potatoes and salt.

Add broth and simmer until potatoes are fork-tender.

Add other ingredients and heat through.

Salt and pepper to taste.
