PINEAPPLE UPSIDE DOWN CAKE

This is the BEST.

Ingredients:

1/4 C earth balance

2/3 C Brown sugar
1 can sliced pineapple, drained.
Maraschino cherries (optional, but highly recommended)

1 1/3 C flour
1 C sugar
1/3 C shortening
3/4 C almond milk (or any other non-dairy milk)
1 1/2 t baking pwd
1/2 t Salt
Egg replacer for 1 egg






Make it:

Heat oven to 350 degrees.

Heat earth balance in 10 inch ovenproof skillet.

Sprinkle brown sugar over earth balance. Place pineapple slices in pan. Put a cherry in the middle of each pineapple slice.

Beat all the other ingredients on low for 30 seconds, scraping the sides of the bowl constantly.

Beat on high for 3 minutes, scraping the sides of the bowl occasionally.

Pour batter over fruit in skillet.

Bake for 45-50 minutes.

Immediately invert onto heatproof plate. Let the skillet sit on the cake for a few minutes.

Serve warm. Add vegan whipped cream (optional).
