TORTILLA SOUP

Ingredients:
1 pkg corn tortillas
Oil

1 medium onion, chopped
4 stalks celery, chopped
2 large carrots, chopped
2 potatoes, skinned and diced
1 C sliced mushrooms

1 small zucchini, bite-sized sliced
6-8 cups vegetable broth
2 cans Ro-Tel diced tomatoes and chilies

Salt




Make it:
Fry tortillas and drain on paper towels.

Sauté  onion, celery, carrots, potatoes, and mushrooms.

Add other ingredients and simmer until zucchini is tender.

Salt to taste.






Serve with Mexican Rice.
