BROWN SUGAR COOKIES

These are so amazing!

Ingredients:

2 C flour
1 t baking soda
1 1/2 t cornstarch
1/2 t cinnamon
1/4 t salt

3/4 C melted earth balance
1 1/4 C brown sugar

Egg replacer for 1 egg
2 t vanilla

1/3 C sugar











Make it:

Mix flour, baking soda, corn starch, cinnamon, and salt.

Mix butter and brown sugar in till there are no clumps.

Add egg replacer. Then add the vanilla.

Mix it all together. (I like to use my hands)

Chill for at least 2 hours.

Let the dough soften at room temperature for a few minutes.

Preheat oven to 325 degrees and line two baking sheets with parchment paper.

Roll about 2 T of dough into a ball and roll it around in the sugar. Place them on the baking sheets.

Bake for 8-9 minutes.

Remove from oven and gently press down the top of the cookies. (It doesn't have to be nice, and don't squish the cookie completely.)

Bake for 1-2 minutes.

Let cool a few minutes. (But not to long, I like them best warm) ;)
