Ingredients:
1 10 oz bag fresh baby spinach, chopped
2 C sliced strawberries
1/2 C sliced red or sweet onion
1/3 C fresh lemon juice (1 1/2 lemons)
Zest from 2 lemons
3 T sugar
1 T oil
Ground pepper
Make it:
Whisk together lemon juice, lemon zest, sugar, oil, and pepper. Let sit while sugar dissolves.
Combine spinach, strawberries, and onion.
Just before serving, pour dressing over salad.
