Ingredients:1/2 C ground flaxseed
1 1/2 C water1 1/4 C c brown sugar
1 C granulated sugar1/2 t salt
1/2 t vanilla
1 1/2 C creamy peanut butter
1 stick earth balance (1/2 C)1/2 C m'n'm's or vegan chocolate chips
1/2 C vegan chocolate chips
2 t baking soda
2 t xanthum gum
4 1/2 C quick cooking oatmealMake it:
Mix flaxseed and water together and let sit 5-10 min.
Mix brown sugar and granulated sugar with flax mixture.
Stir in salt, vanilla, peanut butter, and earth balance. Mix well.
Stir in choc. Chips, m'n'm's, baking soda, xanthum gum, and oatmeal.
Line cookie sheets with parchment paper. Put 1/4 cup of dough on sheets and smoosh into large cookie shapes. Bake 15-17 min at 350 degrees.
This recipe is a spin off of my great grandma's original recipe. It was 4x larger!
