LENTIL SALAD

Ingredients:

1 C dry brown lentils
1 C diced carrots
1 C red onion, diced
2 cloves garlic, minced
1 bay leaf
1/2 t dried thyme

2 T lemon juice
1/2 C diced celery
1/4 C chopped parsley
1 t salt
1/4 t ground black pepper
1/4 C Olive oil



Make it:

In a saucepan combine lentils, carrots, onion, bay leaf, and thyme. Add enough water to cover by 1 inch. Bring to boil.

Reduce heat and simmer uncovered for 15-20 minutes or until lentils are render but not mushy.

Drain and remove bay leaf.

Add the rest of the ingredients and mix.
