This is a vegan version of chorizo.

Ingredients:

1 3/4 C TVP
1 1/3 C sun dried tomatoes
2 C boiling veggie broth

1/4 C red wine vinegar
3 T tomato paste
1/2 minced large onion
3 cloves garlic

1/2 t extra virgin olive oil

Spices:
1 t cayenne
1/2 t chili pwd
2 t dried thyme
2 T dried oregano
1/2 t ground allspice
1/4 t ground cloves
2 T smoked paprika
2 T ground coriander
1 1/2 T cumin
1/2 t cinnamon











Make it:

In a large bowl, add TVP then tomatoes. Add boiling veggie broth. Do not mix.

After about 10 minutes remove tomatoes, chop them, and return to bowl.

Add remaining ingredients, including spices, except the oil. Stir well.

Heat oil in a large skillet over med. heat. Add the soyrizo mixture.

Cool about 5 minutes, stirring frequently.
