Written Recipe: Tamale Pie

Recently I made a dish which was featured in one of the most important chapters of Chasing Pearls. As per my readers' requests, I have decided to share recipe with you all. I hope that someone else will make and enjoy it and share the results with us here on wattpad, In Shaa Allah. I'm genuinely interested in the real life impact my book might have on someone, and well, cooking/eating something one of the main characters herself has made, I think it'll let everyone experience a bit of Chasing Pearls in their lives too. So, without further ado, ladies and... POSSIBLE GENTLEMAN OR THE CRICKETS ON THE MEN'S SIDE(?), here we go.

TAMALE PIE

(Serves 10)

Cornbread base
2 cups yellow cornmeal
2 cups all purpose flour
2 tbs baking powder
2 tsp sugar
1.5 tsp salt
1sp black pepper
1sp paprika
2 tbs parsley flakes
2 diced serrano or peppers
2 diced habanero peppers
1.25 cup corn oil (or vegetable oil)
2 cups milk
2 eggs
1/2 cup cooked corn
Handful of shredded cheddar jack cheese

Filling

1/2 medium sized white onion, diced
1 hefty tbs of garlic paste (or 3 crushed garlic cloves)
5 tbs of cayenne pepper (powder)
5 diced serrano peppers
2 diced habanero peppers
2 tbs olive oil
Pinch of salt
1 tsp cumin powder
3lbs ground beef
3 lbs of canned pinto beans (pictured)
4 packets of taco seasoning (you can make your own but I was short on time so I'd recommend you stick with store bought like I did if this is your first time).
1 can HOT enchilada sauce
1 bottle of habanero hot sauce

Topping

32 oz bag shredded cheese (Mexican blend if you can get it, if not, cheedar jack is good too. If can't do either, make your own mix from mild chedder and Monterey jack)

2 diced serrano peppers
2 diced habanero peppers
1 can of medium black olives cut in small circles
1/5 white onion (diced)
1/4 cup green onion
1 tsp parsley flakes

STEP 1) Preheat your oven to 400°F (or don't, I didn't preheat so whatever lol)

STEP 2) In a large bowl, mix together your flour, cornmeal, baking powder, sugar, salt, parsley flakes, paprika, and black pepper. Whisk them together nicely. In a separate bowl, mix your eggs, milk, and oil, then combine with your dry ingredients and stir. Toss in your corn and peppers and mix. Add in your handful of cheese and do what? Mix again. Fantastic.
