KITSUNE. I know it seems random, but since he lived in Japan for 38 years while he trained as a samurai, he's actually greatly versed in Japanese mythology and knows a great deal about many gods and yokai. (The one thing he doesn't know is the language, aside from a handful of words.)
And since he's almost as old as the earth itself, he's already old enough to earn all nine tails, and when a kitsune gains its ninth tail its fur turns white or gold. This is convenient, because either way his fur would be white to match his original form.

And since after 50-100 years, a kitsune can transform into any human regardless of its age or gender, here is his human form. (Yeah, technically he could transform into his old form, but that would make things way too easy, I don't know if a kitsune can have more than one human form, and it would kinda be a waste of effort after I've gone to the trouble of designing this form.)
