"Change as a person" or not

"Never change for anybody"
I read this on a shirt the other day and I provoked with this thought.
There are at least hundreds of books where there is character development. The person is changing either for the better or worse.
And in some books, a character changes themselves for the love interest.
This is so confusing to me.
If you fall in love with someone, you are falling in love with something about them. They can become a better person, but is that what the person fell in love with?
Also, if a person that likes another person is looking to change them, doesn't that mean you just want this person to fit your ideal love interest? I get so confused.
You need to decide this for yourself.
I believe in character development, but not really in couples.
For example Klaus Mikaelson, he kills lots of people. Caroline (they are not together but if-when) liked this dark side of him. If Klaus started to change, didn't this mean that she wouldn't be in love with him anymore- or if she liked this more, she wasn't in love with him before- or she likes both-
