Yam Porridge/ Yam Pottage

Yam porridge *ahh*, the 4th love of my life, my bae ( in the yam world), the G.O.A.T of all tubers, you just have to love how versatile yam is, it can be boiled, fried, grilled, baked, turned into yam balls, yam porridge, Ikokoré ( it's a Yoruba dish that's kind of similar to yam porridge)

INGREDIENTS
Yam
3 cooking spoons of Palm Oil
1 large Onions ( chopped)
Chilli pepper ( chopped)
Habanero ( if you want it really spicy)
Vegetable ( Pumpkin leaves )
Salt
Spices

METHOD
- Peel and dice your yam (make it cube shaped and small like cube sugars)

- Pour in your chopped onions and boil till extremely soft ( soft to the extent a baby can chew it)

- Mash 80% of your boiled yam ( Don't pour away the water before mashing)

- Pour in your palm oil and chopped chilli

- Add your spices (thyme, turmeric, curry, ginger and garlic) and salt to taste

- Mix it all properly and leave to simmer for 10 minutes

- Throw in your vegetable and simmer for 2 more minutes

- Your dish is ready to serve ( paired with any protein of your choice, personally I prefer fried fish)

This dish goes well with your normal everyday water
