Nigerian Jollof Rice With Zobo (hibiscus drink)

Intermediate Skill

The first recipe is definitely the world famous Nigerian jollof rice (even Mark Zuckerberg loved it), I mean you can't go wrong with this dish, serve it with some coleslaw and peppered chicken, fish, escargot (peppered snail) or even portobello mushroom (for the vegetarians) (whatever suits you) with a glass of Zobo and your guests and family members will be begging for more.

                  INGREDIENTS ( serves 3-4)
Rice (4 cups)
5 large tomatoes
Bell peppers (as much as you want)
Yellow peppers (optional)
2 large onions (chopped)
Stock/ Broth (meat or chicken) ( water for the vegetarians )
Olive oil
Carrots
Green beans
Peas
Salt
Maggi and other spices to taste

                           METHOD
* Blend the tomato, pepper and onions together

* Parboil your rice (you want to cook it exactly half way)

* Rinse the parboiled rice and set aside

* Heat your oil, add the remaining diced onion and leave to fry for a while (be careful not to burn it)

* Add your blended tomato, pepper and onion paste and leave to fry

* Add your salt, Maggi and other seasonings (curry, thyme, rosemary, turmeric and a little ginger and garlic powder)

* Pour in your meat stock or chicken broth (personally I prefer the meat stock but you do you ) (for the vegetarians just add water )

* Cover the pot and leave it to simmer

* Add your rice (don't stir the pot to prevent the rice from burning) and cover

* Add your diced carrots, green beans and peas and leave to simmer

   While the rice is on fire you might as well prepare your coleslaw (I like mine really simple but you can use your own recipe )

                       INGREDIENTS
Cabbage
Carrot
Mayonnaise (I personally don't like mayonnaise so I use salad cream instead but again you do you)

                        METHOD
* Grate your cabbage (it's better this way but you can also thinly slice it)

* Chop your carrots thinly

* Add everything into one bowl, add as much mayo as you want and mix it all today, voila (I told you it was really simple)

      My Zobo recipe is a bit different and it has to be made some hours before serving so yeah

                        INGREDIENTS
Zobo (dried hibiscus flower)
Fresh Ginger (peeled and grated)
Pineapple peel
Flavouring (whatever flavour you like)
Cucumber (diced)
Sugar to taste

                          METHOD
* Boil some water, bring it down and pour your hibiscus flower into it, cover the pot/ bowl (I prefer to use my pot) and leave to cool for a bit

* Add your pineapple peel, flavouring, ginger and enough sugar, mix together and cover the bowl

* Pour the diced cucumber into your Zobo and refrigerate

* Remove your pineapple peels before serving

* Garnish with some sliced cucumber

    Serve your jollof rice with whatever meat and or vegetable you chose with a side of coleslaw and a cup of Zobo, I mean what can go wrong?
