INGREDIENTS
1 bowl of potatoes, peeled and cleaned
1 bowl of boiled red beans
1 cup of onion rings
2 tomatoes, chopped
1 green bell pepper, chopped finely
1 yellow bell pepper, chopped finely
1/2 teaspoon of turmeric
1 teaspoon of sage
1 teaspoon of paprika
1/2 teaspoon of rosemary powder
Corn starch and water, mixed
1 cup of water
Pepper to taste
Oil to fryMETHOD
In a pan add oil and add the potatoes and fry for 5 minutes.Add the chopped green and yellow peppers to the pan and sautè.
Add the turmeric, sage, rosemary, paprika and saute.
Add the tomatoes and cover with lid till the tomatoes are ready for 1 minute.
Add the boiled beans to the pan and let the mixture simmer for a bit before adding the water plus the cornstarch mixture.
Add salt and pepper to taste.
Add the onion rings and cover with lid. Let the mixture cook for 20 minutes.
Serves 2.
