INGREDIENTS
1 duck, medium size
2 big onions
4 tomatoes
3 green chilli pods
2 tablespoons baking flour
2 litres water
50ml cooking oil
1 teaspoon curry powder
2-3 teaspoons saltMETHOD
The duck should be dressed and left to hang overnightCut into pieces and roast lightly over charcoal stove
Chop the onions and cut the tomatoes
Heat the oil in a pan and fry the onions till tender and golden brown
Add the curry powder, salt and tomatoes
Put in the meat and cook, stirring occasionally and turning the meat till dry. Add the whole chillies
Add warm water, approximately one litre or more, to just cover all the meat
Cook on low heat for 45 minutes
Mix flour with a little water and add to the stew
Bring to the boil . Taste and correct the seasoning add more liquid if necessary
Boil for another five minutes
Serve with the desired staple
