Ingredients

     - 1 yellow croaker (about 1 lb/450 grams)

     - 1 Tbs. of minced scallions

     - 1 tsps. of minced ginger root

     - 5 cups of stock or water (if you use stock, choose fish or chicken stock)

     - 1/2 Tbs. of cooking wine

     - 1 tsps. of salt

     - 2 Tbs. of vinegar

     - 1/2 tsps. of pepper

     - 1 tsps. of sesame oil

     - 2 Tbs. of shredded scallion

     - 2 Tbs. of coriander

Directions

1) Score the fish diagonally in the thick areas. In a large bowl, mix the vinegar, pepper, and sesame oil and set aside.

2) Heat 1 tablespoon of oil in a wok pan, and stir-fry the minced scallions and ginger root until fragrant.

3) Add the stock/water, cooking wine, and salt into a pot. Bring the mixture to a boil, and then add the fish. Once again, bring to a boil, reduce the heat to medium and cook for about 6 minutes.

4) When the fish is hot, pour it into the soup bowl and sprinkle it with the shredded scallion and coriander. Serve immediately.
