                              Coconut  Cake

Ingredients                         Quantities
Flour                                           100g
Margarine                                  100g
Sugar                                           80-100g
Dried coconut                            25g
Egg                                               3
Baking powder                           1/2 tsp

                                 Method
1:Cream fat and sugar until light and fluffy.
2:Sieve flour and add baking powder and coconut.
3:Break egg and whisk until foamy.
4:Add half of the whisked egg to the creamed mixture and cream again.
5:Add the remaining egg to the mixture.
6: Add the baking powder to the flour and sieve together into the mixture.
7:Add the grated coconut and mix thoroughly.
8:Pour into a greased cake tin and put into a preheated oven.
9:Bake for about 20-30 minutes then cool and serve.
