I don't know if you know this but since garbanzos, beans and lentils are very popular here in Spain, what I've learned is that if you don't want to spend hours cooking these, you can always put them in water overnight and they'll cook in a flash.

Ur talking about being vegan, not vegetarian. Vegetarian is no meats but still animal products
