Grilled Sausages with Balsamic Onions

*Arugula's pepperiness contrast the sweetness of grilled onions, but other tender greens, such as baby kale or spinach, would work too.*

Ingredients
1, halved and sliced ¾ inch thick red onion

4 cooked (12oz) chicken sausage links

4 hoagie rolls

4 cups arugula

¼ cups balsamic vinegar

1 to 2 tablespoons fresh thyme leaves

4 ounces, softened goat cheese

Directions
1. Brush onions with 1 tablespoon olive oil. Sprinkle with ¼ teaspoons salt. Grill onions and sausage links on rack of a covered grill directly over medium-high 8 to 10 minutes or until onions are tender and sausages are heated through, turning once. (Or grill in a grill pan over medium-high.) During the last 2 to 3 minutes of grilling, toast hoagies on grill.

2. In a large bowl combine arugula, onion slices, balsamic vinegar, thyme, 1 tablespoon olive oil, and ¼ teaspoon black pepper.

3. Spread goat cheese on hoagies. Top with sausages and arugula mixture. Serves 4.
