Parmesan Chicken & Pasta Soup

Ingredients
2 tablespoons olive oil

1 onion, chopped

2 garlic cloves, minced

1 tablespoon Italian seasoning

14.5 ounce can diced tomatoes, drained

4 cups Chicken Broth

16 ounce bag frozen garden blend Italian style vegetables

8 ounces cooked small pasta shells

3 cups cooked chicken, cubed or shredded

Salt and black pepper to taste

¾ cup parmesan cheese

Directions
1. In a large pot over medium-high heat, add oil and sauté onion until soft, about 3 - 4 minutes. Add garlic and sauté another minute.

2. Add Italian seasoning, tomatoes, and chicken broth and bring mixture to a boil.

3. Reduce heat to low and add frozen vegetables and summer for 10 minutes.

4. Add cooked pasta, chicken, and Parmesan cheese.

5. Cook until pasta and chicken is heated through, about 2 minutes.

6. Ladle into bowls and serve hot.

Refrigerate any leftovers.
