Bunch of recipes I've gathered throughout my time of cooking and such, the book I have them in has deteriorated greatly and I didn't know where else to put these!
Most are recipes you can find online, I'll note them down if I know where they're for...
I use frozen wonton dumplings, or homemade, but I unfortunately don't have the recipe written, so I shall link a dumpling recipe!
Wonton (Chinese dumpling)- soup
- Soya sauce
- Salt (pinch)
- Chives (chopped if not already)
- Chicken stock
- White pepper (ground, also just a pinch)
-Water, for however much soup you need.
Filling of dumplings:
- 1/2 lbs ground lean pork (230g)
- 1/2 peeled shrimp, chopped (230g)
- 1 tbs finely minced ginger [or ginger paste]
- 2 green onions, finely chopped
- 1 tbs soya sauce
- 2 tbs Shaoxing wine/ dry sherry
- 1/2 teaspoon salt
- 2 tbs sesame oil
Their method:
Without a food processor: Combine ground pork, shrimp, ginger, green onion, soy sauce, Shaoxing wine, salt and sesame oil in a big bowl. Mix well with a fork until everything combines well together and the mixture feels a bit sticky.With a food processor or a blender: coarsely chop the ginger and green onion. Add all the filling ingredients except the shrimp. Mix until it forms a silky paste. Add the shrimp and blend again, until the shrimp are finely chopped but don't become a paste.
