Gari Cake:

Its a traditional cake here. It s made form gari.  Gari is a fine to coarse granular flour of varying texture made from cassava tubers (also called cassava roots) which are cleaned after harvesting, grated, water and starch squeezed out of it, left to ferment and then fried either in palm oil or without palm oil and serves as a major staple food in West Africa. It is also called garri or gali in some parts of sub-Saharan Africa.

Ingredients :

Egg whites - 5

Sugar - 50g

Desiccated coconut - 25g

Gari  - 80g

1 tsp baking powder - 1tsp

Salt - pinch

How to make:

(1)Pre-heat oven to a of 175°

(2)Get all ingredients ready and measured out.

(3)Separate the egg whites carefully.

(4)Whisk the egg whites until it foams.

(5)Add in sugar and whisk until the foam has a shine. (You can. at this stage add in melted chocolate for a chocolate variety if you want)

(6)Mix the gari, coconut, baking powder and salt together and add into the whipped egg whites/sugar mixture and gently fold in.

(Make sure not to over fold or you might loose the airy elements)

Bake in a pre-heated oven at 175° for 20-30 minutes.

Tip: you can keep an eye on the gari cake after 20 minutes and do a check with toothpick. If it comes out clean and dry, cake is ready.
