Ingredients :
Eggs - 3
Half cup of milk
4 medium to large sized overripe
bananasMelted butter (or 1 cup oil.) - 2/3cups
Brown sugar - 2/3 cups
Soft flour - 2cups
Cinnamon powder - 1tsp
Baking powder - 1tsb
Baking soda - 1tsp
Vanilla - 1tsp
Mixed spices - 1tsp
Procedure :
(1) Preheat oven to 180°C.
(2) Spray your pan with baking spray or grease with vegetable fat.
(3) Mix and whisk all wet ingredients (except half of milk) together until it's well mixed.
(4) Gently add dry ingredients in 3 batches, mixing after each addition.
(5)Add in the rest of the milk before the last batch of flour is added.
(6) Pour into pan until 2/3 full.
(7)Bake for 45 mins.
To check if its done: Insert a dry skewer or toothpick. If it comes out dry, cake is done.
NB:
Be sure to avoid over-mixing the batter. Over-mixing causes the cake to lose it fluffiness and it will come out tough
Also, if your oven does not have a glass door with which you can view the cakes, avoid the temptation of opening the oven at least 30mins after placing tins inside. Opening it too soon can cause your cake to sink due to the drop in temperature of the oven.
Other flavour variants can be achieved with this basic recipe:
(1) To get chocolate banana cake add 3 tablespoon of rich dark cocoa powder.
(2)To obtain red velvet banana cake add 1 tablespoon cocoa and 2 tablespoon of concentrated beetroot juice.
Serving suggestion
As breakfast: Slightly warmed with yoghurt or any beverage of choice
As dessert: With ice cream.
