Puttanesca sauce Recipe
Ingredients:
1 cup pitted black olives
2 drained oil packed anchovy fillets
1 cup drained capers
5 medium cloves garlic (chopped)
6 basil leaves (optional)
1 tbsp loosely packed fresh oregano or thyme leaves
1 tsp dijon mustard
2 tbsp fresh lemon squeezed
Extra virgin olive oil as needed
Kosher salt and freshly ground black peppers
Procedure:
In a pan heat Olive oil
Fry Garlic until its golden brown
Place black olives and drained capers until its well blended
add anchovy fillets and mix well on the pan
When oil turns slightly dark put the dijon mustard and squeeze it with lemon
Put thyme leaves and oregano to enhance the flavor
Salt and pepper to taste
Additional olive oil depending on preference
Best served with garlic bread
