Ingredients for bread:
1/2 cup monk fruit
1/8 cup stevia
2 cups almond flour
1/2 cup cassava flour (or 1/4 cup of almond flour)
pinch of salt
1/8 tsp guar gum (1/2 tsp of Xanthum gum)
1/2 tbsp baking powder
3 eggs
1/2 cup melted coconut oil
1/4 cup almond milk
1 tsp vanilla
1/2 cup cut strawberries
1 tsp cinnamon
1 tsp black pepper
Ingredients for glaze:
1 cup of monk fruit
1 tbsp of almond milk
1/4 cup of mashed strawberries
1/2 tsp of vanilla
2 tsp of cinnamon
1/2 tsp of black pepper
Directions:
-Preheat oven to 350°F (175°C)
-Line a loaf pan with parchment paper and set aside
-Stir together dry ingredients in a large bowl (except for the cinnamon and black pepper)
-First put eggs, then coconut oil into the dry ingredients
-Once completely combined add almond milk and vanilla
-Fold in the strawberries, cinnamon, and black pepper
-Pour into the prepared loaf pan and stick in the oven for 40 minutes
-Let the bread cool before taking it out of the pan
-Pour monk fruit, black pepper, and cinnamon in a bowl
-Add vanilla and milk
-Mix until smooth
-Pour glaze over cooled bread
