Peanut Butter Cookie Dough Bites

Ingredients:
• 1 + 1/2 cups of gluten free rolled oats
• 2 tablespoons of coconut oil
• 2 tablespoons of smooth peanut butter (or almond butter or sunflower seed)
• 1/4 cup maple syrup
• 1 teaspoon vanilla extract
• 1/2 cup of almond flour (or meal)
Do NOT use normal flour
• 1/4 teaspoon sea salt
• 2 tablespoons dark chocolate chips

This is a vegan recipe so you can substitute dark chocolate for milk chocolate, etc.

In a high speed blender, blend oats until fine flour forms.

In a large bowl, combine the oil, peanut butter, maple syrup, and vanilla and beat with hand mixer until smooth. Add the almond flour, oat flour, and salt and beat again until combined. Fold in chocolate chips.

Roll the dough into small balls. (About 1 tablespoon) Of chocolate chips fall to the bottom of the bowl, press them back in the dough when rolling. Place the finished bites on a plate lined with parchment paper.

Freeze the bites for 5-10 minutes or until firm. Store the bites on the freezer for quick and easy snacks.
