~Chocolate Crinkle Cookie~

I've made this twice and my family has eaten it all ok me!  It's an easy recipe but it does take a long time so keep this in mind.

Ingredients:

-1/2 cup (2.2 oz/60g) unsweetened cocoa powder
-1 cup (7 oz/205 g) white granulated sugar
—1/4 (60ml) vegetable oil
-2 large eggs
-2 teaspoons pure vanilla extract
-1 cup (3.5 oz/130 g) all purpose/plain flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-1/4 cup confectioner's sugar or icing sugar (for coating)

Instructions:

1. In a medium-sized bowl, mix together the cocoa powder, white sugar and vegetable oil.  Beat in eggs one at a time, until fully incorporated.  Mix in the vanilla.

2. In another bowl, combine the flour, baking powder, and salt.  Stir the dry ingredients into a wet mixture just until a dough comes (do NOT over mix).  Cover bowl with wrap and and refrigerate for at least 4 hours or overnight. 

3. When ready to bake, preheat oven to 350F|175C.  Line 2 cookie sheets or baking trays with parchment paper or baking paper.  Roll one tablespoonful full of dough into balls for smaller cookies or two tablespoons for larger cookies. 

(Note: These cookies are very sticky so I suggest you put vegetable oil so the cookies don't stick as much.)

4. Add confectioners (icing) sugar to a smaller bowl.  Generously and evenly cost each ball of dough in confectioner sugar and place onto prepare cookie sheets. 

(Note: You don't have to put this in.  It's optional.)
